Abstract

This article examines the situation of rice consumption in Japanese families in 2006. The goal of this article is to examine (1) the frequency of rice consumption at the breakfast, lunch and dinner tables; (2) the characteristics of the households that serve more rice for breakfast, for lunch or for dinner. A canonical correlation analysis was adopted to examine the data. The data was obtained from "The Database of Food Expenditure in Japanese Households" that NTT Data Lifescape Marketing Corporation has been collecting since 1998. The following two conclusions were reached: 1. Rice was served most frequently for dinner, then for lunch, and least frequently for breakfast. 2. Households with full-time working mothers tend to serve rice at breakfast. Households with non-full-time working mothers, with elderly persons, and households with high health awareness tend to serve rice for dinner.
