Abstract: | We tried to convert the upstream chum salmon muscle and squid hepatopancreas, which are major marine byproducts in northern Japan, to angiotensin I-converting enzyme (ACE) inhibitory peptides. Hydrolysates prepared from defatted chum salmon muscle and squid liver with some protease showed the inhibitory activity against ACE. When deflated chum salmon muscle was hydrolyzed for 2 h at 37℃ with 5% thermolysin, the inhibitory activity reached 73.0% at 78.9 μg/mL. The yield of the hydrolysate was 86.9%. |
