| Abstract: | パネルは官能試験における重要な分析機器である。本研究では官能試験においてパネルの地域間差や年齢間差が米の官能評価に与える影響について検討した。さらに，米の官能試験において，官能試験の経験がないパネルを用いた際のパネル数が官能評価の精度に与える影響について検討した。その結果，米の官能評価ではパネルの地域間差は認められなかった。パネルの年齢間差は特定の傾向は認められなかったが，パネルの年齢は官能評価の結果に影響を与える可能性があることがわかった。また，官能試験の経験のないパネルであっても，その人数を40人以上とすることで精度が良い官能評価が可能であることがわかった。 | | A panel is an essential analytical tool in sensory evaluation of food. In this study, the effect of variances in region (Sapporo, Tokyo and Osaka) and ages of panelists on rice sensory evaluation were investigated. The effect of number of panelists on rice sensory evaluation was also investigated using untrained consumer panels. Variance in regions of panel groups had no effect on sensory evaluation. Variance in ages of panel groups had little effect on sensory evaluation, but some fluctuations by variances in ages might exist in sensory evaluation. It was found that a high level of accuracy could be obtained when more than 40 untrained panelists evaluated eating quality in a rice sensory test. |
